做(zuò )法(fǎ ):春笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分(fèn )钟左右。再加(jiā )入生(shēng )抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入少(shǎo )量清水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火(huǒ )。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
