做(zuò )法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把(bǎ )陈皮泡软,拍裂一小(xiǎo )块姜,热锅(guō ),用姜块在(zài )锅上(shàng )擦一遍,放两勺油(yóu ),待油六成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其(qí )他材(cái )料,武火(huǒ )煮(zhǔ )沸,转(zhuǎn )中小(xiǎo )火煲一个(gè )半小时,下盐调(diào )味即(jí )可品尝。
