做法:春笋切成片后(hòu )加(jiā )少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛(niú )肉(ròu )片、葱段翻炒(chǎo )1分钟左右(yòu )。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入(rù )少量清(qīng )水(shuǐ )半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖(gài )焖。
