做法(fǎ ):春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡(pào ),生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱(cōng )段翻炒(chǎo )1分(fèn )钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的(de )时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅(guō )盖(gài )焖。
