做法:春笋切成片后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加入少量清(qīng )水(shuǐ )半掩(yǎn )住(zhù )春笋,盖上锅盖大(dà )火煮开后转中火(huǒ )。煮到(dào )水快熬干的时(shí )候加入(rù )盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅(guō )盖(gài )焖。
