做法(fǎ ):春笋切成片(piàn )后加少许(xǔ )盐(yán )捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋(sǔn ),盖上锅(guō )盖大火煮(zhǔ )开后(hòu )转中火。煮到水(shuǐ )快熬干的时候(hòu )加入(rù )盐(yán ),翻炒均匀(yún )稍收(shōu )汁时(shí )盖上锅盖焖。
