做(zuò )法:春笋切成片后加(jiā )少(shǎo )许盐捞出后用(yòng )清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少(shǎo )量清水半(bàn )掩住(zhù )春笋,盖(gài )上锅盖(gài )大火(huǒ )煮(zhǔ )开(kāi )后转(zhuǎn )中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
