做法:洗净宰好鲫鱼,洗净淮(huái )山和(hé )薏米。用清水把(bǎ )陈(chén )皮泡软,拍裂一小块姜,热锅(guō ),用姜块在锅上(shàng )擦一(yī )遍,放(fàng )两勺(sháo )油,待油六成(chéng )热下鱼,煎(jiān )至微黄。煮沸瓦煲(bāo )里(lǐ )的清水,放入煎煮好(hǎo )的鲫鱼和(hé )其(qí )他材(cái )料,武火煮(zhǔ )沸,转中小火煲一个半小时(shí ),下盐调(diào )味即可品(pǐn )尝(cháng )。
