做法:洗(xǐ )净宰(zǎi )好鲫鱼(yú ),洗净淮(huái )山和薏米。用清水把陈皮泡软(ruǎn ),拍裂(liè )一小(xiǎo )块姜(jiāng ),热锅,用(yòng )姜块在(zài )锅上擦(cā )一遍(biàn ),放两勺油(yóu ),待油六成热(rè )下鱼,煎至微黄。煮(zhǔ )沸瓦煲(bāo )里的清水,放入煎煮好的鲫(jì )鱼和(hé )其他(tā )材料,武火煮沸,转中小火煲一个(gè )半小时(shí ),下盐调味即(jí )可品尝。
