做(zuò )法:春笋(sǔn )切成(chéng )片后加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜(jiāng )切片,葱(cōng )切成段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住(zhù )春笋,盖(gài )上锅盖大火煮开后转中(zhōng )火。煮到水快熬(áo )干的(de )时候加(jiā )入(rù )盐(yán ),翻炒均匀稍收汁时(shí )盖上锅盖焖。
