做法:春笋切(qiē )成片后加少许盐捞出后(hòu )用清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放(fàng )入生姜、春笋(sǔn )、牛(niú )肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀,加入(rù )少(shǎo )量清水半掩住春笋,盖上(shàng )锅(guō )盖大火(huǒ )煮开后转中(zhōng )火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒(chǎo )均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
