做(zuò )法:洗净宰好鲫鱼,洗净淮山和(hé )薏米。用(yòng )清水把陈皮泡软,拍裂一小块(kuài )姜(jiāng ),热(rè )锅,用姜块在(zài )锅上擦一遍,放(fàng )两(liǎng )勺油,待油六成热下(xià )鱼(yú ),煎至微黄。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入(rù )煎(jiān )煮好的鲫鱼和其他材料(liào ),武火煮沸,转中小(xiǎo )火煲(bāo )一个半(bàn )小时,下盐调味即可品尝。
