做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂(liè )一小块姜,热锅,用姜块在锅上擦一遍,放(fàng )两(liǎng )勺油,待油六成热下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清水(shuǐ ),放入(rù )煎煮好(hǎo )的鲫(jì )鱼(yú )和(hé )其(qí )他(tā )材料,武火煮沸,转中小火煲一(yī )个半(bàn )小(xiǎo )时,下盐(yán )调(diào )味即(jí )可品尝。
