做(zuò )法:春笋(sǔn )切成片后加少(shǎo )许盐(yán )捞出后(hòu )用清水浸泡(pào ),生(shēng )姜(jiāng )切片,葱切成段。锅(guō )烧(shāo )热,倒(dǎo )入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分钟左(zuǒ )右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入少量(liàng )清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火煮开后(hòu )转中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
